Chipotle Pumpkin Chili
Warm up your loved ones with this comforting fall favorite.
- 2 Tbsp TSOOC Chipotle Olive Oil (plus more to drizzle)
- 1lb ground turkey, chicken or beef
- 1 medium onion, chopped
- 1 large bell pepper
- 1 cup diced celery
- 5 cloves garlic, minced
- 3 Tbsp ground paprika
- 1 Tbsp ground cumin
- 1Tbsp oregano
- 2 bay leaves (optional)
- 4 Tbsp TSOOC Cinnamon Pear Dark Balsamic (plus more to drizzle)
- 29oz can crushed tomatoes
- 1 cup of water or chicken/vegetable broth
- 1 cans black beans drained (any bean is a good bean!)
- 2 cups pumpkin diced or squash (puree is ok too!)
- salt and pepper to taste
- optional toppings: sour cream, jalapeños, red onion, shredded cheddar cheese, avocado
In a large pot on medium heat, brown ground meat in TSOOC Chipotle Olive Oil.
Add onion, bell pepper, celery, garlic, and cook until onion is translucent. Add all spices, herbs and TSOOC Cinnamon Pear Dark Balsamic. By now you should have a wonderful aroma!
Add in tomatoes, water or broth, beans and pumpkin let come to a boil, then reduce heat to low-medium and let simmer for 30-60 mins.
Add an extra drizzle of oil and balsamic and serve over rice or with a wedge of warm cornbread
