SPANAKOPITA BITES
16 oz frozen chopped spinach, thawed and well-drained and squeezed to remove as much moisture as possible
2 bunches flat-leaf parsley, stems trimmed, finely chopped
1 large yellow onion, finely chopped
2 garlic cloves, minced
2 tbsp TSOOC Leek Fused olive oil
4 eggs
10.5 oz quality feta cheese, crumbled
2 tsp dried dill weed
Freshly-ground black pepper
Ready-to-use filo dough sheets or ready to use pastry of your choice
- Preheat oven to 350F
- On low-medium heat sauté onion and garlic in TSOOC Leek Fused Olive Oil until fragrant and translucent.
- Add all ingredients except pastry to a mixing bowl and combine well.
- Line mini muffin pan with with pastry of choice. Fill each spinach mixture and bake for approximately 15 mins or until crust is golden brown. Remove immediately. Enjoy!
