SPANAKOPITA BITES

16 oz frozen chopped spinach, thawed and well-drained and squeezed to remove as much moisture as possible

2 bunches flat-leaf parsley, stems trimmed, finely chopped

1 large yellow onion, finely chopped

2 garlic cloves, minced

2 tbsp TSOOC Leek Fused olive oil

4 eggs

10.5 oz quality feta cheese, crumbled

2 tsp dried dill weed

Freshly-ground black pepper

Ready-to-use filo dough sheets or ready to use pastry of your choice

  1. Preheat oven to 350F
  2. On low-medium heat sauté onion and garlic in TSOOC Leek Fused Olive Oil until fragrant and translucent.
  3. Add all ingredients except pastry to a mixing bowl and combine well.
  4. Line mini muffin pan with with pastry of choice. Fill each spinach mixture and bake for approximately 15 mins or until crust is golden brown. Remove immediately. Enjoy!
